I had to cuff a one handed man in training. Belt loops.

I also carried a hobble that only got used as a dog leash. That could be used too. That's somewhere in the house or truck as a backup leash for the dog.

I use flex cuffs and attach it to some point on their belt if possible. If it can go behind the back then the flex cuff is attached to the other arm.

I've ran into the issue with someone with one arm before. I attached one end of the cuffs to his belt and center of back belt loop
 
On a side note, search the sling as well. When I had my shoulder surgeries I kept my hammerless J Frame in a pocket holster tucked in my sling between my arm and my body.
We had a regular at the jail that had s prosthetic leg. Always kept contraband in it, so we'd have to take it off and search it.
 
Flexicuffs, leg restraints or a tourniquet around the cast (tight enough to avoid slipping) and then the cuffs. Have had a couple just rip off the belt loops by pulling on the cuffs.

Cuff to a belt loop, then use flex cuffs as belts to anchor his upper arm and forearm to his torso. Or use a belly chain or transport cuffs (handcuffs linked with chain to ankle shackles) with his good hand cuffed behind his back.

How about trying to cuff a guy who's arms too big to get behind their back! Bo Springs was a deaf boxer who would go to the local dive bar. When he took off his hearing aids look out!.
He liked me, because I treated him like an ordinary guy!
I said to him I can't cuff you in back, if you promise to be good I will cuff you in front, he said
"o tay"

Been done here on an angry woman with one hand.
That's what I did. We had a couple of one armed prisoners.

Transport Belt.

I had to make the decision one night.
Broke a dudes collarbone and while I had he cuffed all jacked up initially. The leg irons also worked great. It’s amazing how much compliance you can gain when you tell someone the pain lessons when they start listening.

From the hospital to the county he was in Hyatts with a Transport Belt.
