You can just run any brand 30-06 case through an 8mm Mauser full length sizing die and trim to length.

 

I did this for a friend and the rounds functioned well in his Egyptian Hakim.

I just checked and Norma offers 8x57 brass. If you order some, make sure it's the JS and not the JRS. JRS is rimmed.
Norma is very good brass and the price reflects this.

 

If you do a search online there are several places that sell once fired brass in 8 mauser. You might consider buying a box or 2 of ammo and then your brass will match your chamber.

I think I remember having to turn the neck down on my Forster trimmer. Many moons ago.

 

If you go with reformed 30-06, mark the cases somehow to prevent
having someone chamber them in an actual 30-06. When I did my
conversions for the 7 and 8 mm Mausers I used Korean surplus
PS-74 brass. The odd head stamp makes you think which can be
helpful.

 

Never did any ‘06 reforming, but never had too. I’ve collected commercial 8mm along the way. I have had great success with all of it, really haven’t noticed one better or worse than another.
I did a quick search and found this, not cheap but for hunting purposes you don’t need thousands of rounds, and very reloadable.

 

Why i am a fan of wildcats & oddball calibers for my hunting rifles. 50rds of brass is pretty much a lifetime supply. Buy 100 though, just in case. Your other option is buy factory ammo, sight in, practice, then reload that.

 

I have 200 of 8mm reloads. That’s all I need for hunting, practice, load development etc.
