The current September 30 issue of Wine Spectator magazine ($5.95) contains "An Encyclopedia of Food". It is a large issue with a true encyclopedia of knowledge about food, as well as matching food and wine. Topics include everything I could think of as well as listing their grand award restaurants for wine. Wine maps of important wine producing regions are included. Even corks and wine openers are talked about and pictured. This is a magazine well worth seeking out before it is sold out.
