Wild Hog Recipies? Anyone!!

    Anyone have any good wild hog recipies out there? Thanks in advance.

    Stab it multiple times (all over) with a small knife.

    In each hole put about 1/2 clove of garlic,a shot of hot sauce (I like franks)and a green onion(put the cleaned onion in the hole and cut off even with the meat).

    Put in a preheated oven(500) for 1/2 hour Turn down to 350 and roast until the internal temp reaches 165.

    cook it the same way as you do regular pork.


    If the beast is old and a boar, I normally get it ground or roll into link sausages. Just remember the meat is coarser, can have a strong taste, and very lean with no fat. Also, make sure you cook it "done" and with a perfer 180deg inside temp to kill any parasite. Undercook pork and special wild, may do you harm.

    Wild Hog steaks rubbed with "John Henrys" Mesquite w/ Lemon Pepper Rub. Rub the steaks using a generous amount of rub and allow to set, in the 'fridg for about an hour. Then throw them on the B.B.Q. Make sure they get cooked well done but don't let them over cook to the point where they dry out. Cook on a medium fire and turn constantly. These are really great !
