    Well it's just a gorgeous day here, no clouds, just a slight breeze, and temp in the low eighties, perfect day to grill the first half of my filet mignon, the other half for tomorrow's Memorial Day.

    Got a couple of nice New York strips getting ready for the grill for memorial day even though it’s raining like cats and dogs :)

    Well when I first got to the "I Corps" area in Vietnam 1968, I hooked up with Foxtrot Company(2nd Battalion 26th Marine Regiment 3rd Marine Division) as they had just left Khe Sahn and it's 77 day siege about a month or so prior to my arrival in late April 1968. They were kinda getting a breather and getting all supplied and ready to go out in the bush again. I don't even remember any holiday except July 4th, and Thanksgiving. The USMC Birthday isn't a holiday but we damn sure got hot mashed potatoes and steak choppered to us in the bush while out on Operation "Meade River"...ooorah!

    Well I always eat something special for holidays but especially for Veteran's Day, USMC Birthday, 4th Of July, and Memorial Day. It just reminds me of the days in the foxhole with nuthin' but c-rats and you were lucky if you could cook them, many times just eatin' them straight out of the can. Later.

    I start a Weber Smoky Mountain (WSM) at 6:00 AM and start a beef brisket. Then I go visit a couple cemeteries and look for flags and dates and headstones with combat markings.

    I come back and continue to reminisce until the brisket is done and then share it with my family.

    My wife and family know to leave me alone until I come back and smile and say "Let's Eat!"

    Well everything turned out perfect except I grilled the whole steak instead of just half. I couldn't eat it all so tomorrow looks like I'll put the remaining half in a frying pan with butter. It wil still taste grilled just not quite as good as fresh grilled. I was just lazy and didn't want to cut the steak up before grilling. Oh well. image.jpeg

    I worked with two survivors of the walking dead. Their insignia was a caltrap. 9th division, I believe. Two of the nicest guys you could meet. tom.

    Are saying you plan on recooking a grilled steak?! No!!!! That will ruin the flavor. Just cut the left over cooked meat into thin slices and eat it cold. It will still taste good. I cooked a big steak like yours yesterday (Sous Vide). I cut it into thin slices prior to serving it to my wife and myself. We could not finish it at on sitting. I plan on eating the still flavorful leftovers today. My steak was two inches thick. I chilled the out side of the steak for ten minutes in the refrigerator immediately after cooking it. I then gave it a reverse sear in a very hot hot cast iron frying pan. The quick chill prior to the sear was something new for me. It worked well for me. The meat was medium-rare in the inside and warm and the outside had a flavorful crust.

    Wife and I are thinking pork ribs on the barbie smothered in sweet baby rays BBQ sauce with a first of the year tossed salad. Our weather juussstt warmed up in the Northeast and now it's going to be in the upper 80's and low 90's around here. We had snow on the ground 2 weeks ago.

    Yesterday was my birthday, so we treated ourselves to lobster tails on the Weber grill. First time I've ever attempted it, and they came out pretty well and weren't ridiculously expensive.
    So today we're doing a neighborhood thing (with appropriate social distancing, etc.) and just throwing some hot dogs on the grill.

    Well I have done this before, not often but I have. Doing a reheat in a frying pan w/butter just heats the meat up, most of the grilled flavor remains. I do not like cold meats as in NONE. The only cold sandwich I ever have is a tunafish sandwich and that's rare. Thanks for your suggestion tho.
