WAY different stuffed pepper recipe-Crock Pot version

    Okay,I developed this one myself,it's awesome:


    1 lb ground chicken(turkey tastes funny,but go ahead if you must)
    1 cup uncooked rice(I use 1 pouch of Uncle Bens)
    1 can diced green chiles
    1/2 small red onion,diced fine
    1 tbsp dried minced garlic
    1 tsp ground cumin
    3 or 4 string cheese sticks,cut into equal sided pcs(3/4" or so)
    1 lg(12oz) can green enchilada sauce
    4 or 5 Yellow Bell peppers,topped and seeded(you may discard tops,or add to meat mixture,minced.Do not put on top of the peppers whole as the filling will expand a bit)

    Mix all ingredients except enchilada sauce well,stuff into peppers.Stand peppers on end in crock pot,pour sauce over,being sure to cover completely(no dry spots).Cook on low 7-8 hours.When serving,cut pepper in half lengthwise,lay on side on a bowl and pour sauce over top.Use a spoon...
