Ultimate Lasagna TIMES: Prep: 15 minutes Cook: 2 hours and 5 minutes Cool: 10 minutes SERVING SIZE: 8 servings INGREDIENTS: 2 cups canned diced tomatoes 2 cups tomato sauce ½ cup water ½ cup onions, diced ½ cup green peppers, diced 4 garlic cloves, diced ¼ cup chopped parsley 1½ tsp. Italian seasoning 1½ tsp. house seasoning 1½ tsp. seasoning salt 1½ tsp. sugar 2 bay leaves 1½ lbs. ground beef 1 box frozen chopped spinach, thawed 6-9 oven-ready lasagna noodles 12 oz. ricotta cheese 1 egg, beaten ½ cup parmesan cheese 2 cups colby jack shredded cheese blend 2 cups shredded cheddar cheese 8 oz. cream cheese 1 cup mozzarella cheese, grated DIRECTIONS: Layer Preparation LAYER 1-SAUCE: In a stockpot, combine the tomatoes, tomato sauce, water, onions, peppers garlic, parsley, seasonings, sugar, and bay leaves. Bring to a boil, then reduce heat and simmer, covered, for 1 hour. Crumble the ground beef in a saucepan. Cook until no pink remains, then drain off fat. Add the beef and the thawed, chopped spinach to the stockpot. Simmer for another 20 minutes. Remove bay leaves. LAYER 2-NOODLES: No preparation needed. LAYER 3-RICOTTA MIXTURE: Mix ricotta cheese with egg and parmesan. LAYER 4-SHREDDED CHEESES: Combine colby, jack, and cheddar cheeses. LAYER 5-CREAM CHEESE: No preparation needed. Assembly Preheat oven to 350ºF. Place a thin layer of sauce in the bottom of a 13x9-inch pan. Layer 1/3 each of noodles, ricotta mixture, and shredded cheese mixture. Pinch off small pieces of cream cheese and dot over other cheeses. Add another layer of sauce. Repeat layering 2 to 3 times, ending with sauce. Cover and refrigerate or bake for 20 minutes. Remove from oven and top with mozzarella and continue to bake for another 10 to 15 minutes (40 minutes if refrigerated). SERVING SUGGESTIONS: Serve with Ultimate Cheesey Garlic bread.
