Ultimate Chicken Spaghetti TIMES: Prep: 20 minutes Cook: 35 minutes Cool: 5 minutes SERVING SIZE: 6 servings INGREDIENTS: 1 lb. boneless, skinless chicken breast 4 tbsp. butter 1 finely chopped onion 1 chopped green bell pepper 1 lb. Mexican Velveeta cheese 1 can cream of chicken soup 1 can cream of mushroom soup 1 can Rotel tomatoes 1 lb. spaghetti noodles DIRECTIONS: Preheat oven to 350ºF. Boil chicken breasts in water with a pinch of salt. While chicken is cooking, saute bell pepper and onion in the butter until all is tender and onion is translucent. Remove chicken when cooked and preserve chicken stock. Boil spaghetti noodles in the chicken stock. Cut cheese into cubes and melt in a saucepan along with soups and Rotel. Add pepper and onion to Rotel and soups. Cut chicken into bite-sized chunks and add to Rotel mixture. When spaghetti is cooked, combine all ingredients and pour into a 13x9-inch baking dish. Bake for 35 minutes.
