On the side of an evaporated milk can, it reads "has 50% of the water removed". Can you convert evaporated milk back into regular milk by adding water to it?

You can, but it has a "funny" taste to it. It is all my grandma will use in her coffee. She mixes it 50/50 and keeps it in the fridge in a Mason jar. Gotta love old Southern ladies :)

I added 50% water to it, but it still tasted funny. I added even more water to it, and it's starting to taste alright.

yes put the water back in. If you want really funny tasting milk, try powder milk.

btw: powder milk will last a long time if needed or you have a SHTF BUG out situation and need milk ;)

Maybe she just never added enough water?

Hers is sorta brownish looking for lack of a better word?

You know, she makes the best tomato soup out of a can. I bet the evaporated milk, and meat grease, is her secret!

The only way to make canned tomato soup is with canned milk in lieu of water. MMM good! (Unless you are getting real creative and adding other spices, or adding canned milk, chicken broth and garlic or other such concoctions!)
