    My snack:

    1 cup whipping cream
    splash vanilla extract
    2 pkts Splenda
    Pinch of Mixed Spice
    1 tbsp Cocoa Powder
    1 spoon of instant coffee it you like.

    Beat stiff with food mixer

    blend with unsweetened coconut

    Place small dollops of a lined baking sheet

    Freeze for 1/2 hour

    Satisfies my sweet tooth and need for ice cream!!

    Coconut raspberry fat bomb

    1 1/2 cups coconut oil (melted)
    2 cups shredded coconut (or 1 cup coconut butter)
    1 cube (1/2 cup) butter (melted)
    1/2 cup raspberries
    1/2 tsp vanilla
    1 tsp lemon juice
    stevia or monkfruit or erythritol to taste

    put shredded coconut and about half of the coconut oil (melted) into food processor, blend on high for 5-10 minutes until creamy looking. (quicker than making 'coconut butter' out of straight shredded coconut). Add in remaining ingredients (if you add frozen raspberries you'll need to blend longer as they'll cause the oil to harden) Pour into molds or a pan to be cut up later and put in freezer of refrigerator. Use as a snack or to add extra fat to a meal. ~1-2 net carbs and ~20g fat depending on serving size.
