    I'll be playing that tune as well as I have the other half of that steak tonight and very soon, last night was too late a start.

    No pics of the beef, but it was a dry-aged prime porterhouse, smothered in crushed fresh garlic and onion powder. We ran it in a 120ºF sous vide for an hour, plunged it (in the bag) in cold water so the searing process wouldn't cook it some more, then seared it on the infrared TEC grill running wide open throttle.

    The wine was a surprise find in the back of pop's cellar. I thought after 45 years it would be garbage. It took 15 minutes to get the cork out in pieces, but the wine held up. Would have been better 20 years ago. Oh well.
