So I just bought a Big Green Egg

    Scored a Large with a custom stainless topped nest table, platesetter and upgraded iron grill and stackable extra grill. Lifter cover and ash tool.

    600 bucks for the whole deal, used but in mint condition off craigslist.

    So what are the drop dead recipes and sure fire hits to make with this thing?

    Most compelling reason to get it was hi temps to bake pizza. And I understand long haul low temps runs to make pulled pork out of a Boston butt. I’ve seen fatty recipes made with a bacon weave and need to do that and I’m experienced tg turkey smoker.

    What else do I need to cook?

    How fast do I need to flip steaks at 600 degrees?

    First you have to learn fire control if you've never run low 'n slow with charcoal.

    Green Egg might have a pizza set up. If not you'll want a pizza stone and some way to elevate the pie, so the top and bottom cook at the same rate.

    I use a Maverick ET-732 for constant, remote monitoring of your cooker temp and internal meat temp. Remote monitoring capability makes fire control easy.
    ET-733 and ET-735 are good as well.

    Pro Tip:
    DO NOT submerge probe cable in water to clean !
    Wipe off probe with rubbing alcohol.

    I check internal temp with a ThermaPen and pull when my doneness temp is reached.

    They are not grills. They are ovens. Thick and hold heat better than similar ovens and better than any grill. If they are worth the price is up to the individual depending on their cooking interests and what they are willing to spend. Cooking is a passion. We will spend insane money to get what we want.

    Do what I did. Buy used. Craigslist worked for me.

    The same item new would be 1100 PLUS anywhere from 3-800 extra for the table.

    So 600 was a bargain.

    Primo was my ONLY other consideration because they have BGE quality and the only one made in America.

    Their prices are reasonable, currently there’s a special on: $797 for a Large equivalent to a BGE with nest, wings ash tool gripper and a bag of charcoal. All you need after that is a platesetter.

    BGE has quality and is made in America except for Mexican ceramics.

    All the other ones were Chinese junk.

    They do have a pizza setup. Flip the platesetter to a high position and set the stone on that and it will be flush so you can get the pizza peel under it.

    Temp control I will add a Bluetooth remote eventually.

    Words of wisdom I was given from someone who has one: start low and work up. You can always increase temps but getting them back down is a bear. Lots of thermal mass.

    I have a large BGE. Got it this year. For what I have paid for the four or five grills I have owned in 25 years, I could have purchased one BGE and been done with it.

    The first thing you may notice is you are no longer drying out meet with a propane blow torch. I use the BGE charcoil and get two to three cooks off of filling it to to the top. I’ve cooked a Boston Butt for eight hours and still had charcoal left to cook a steak or burger.
