Smoked Mullet Spread

    Anyone have a good recipe? We had friends when we used to live in G'ville, FL who made it and it was the BEST! Also used to get it at a little fish place in Cedar Key.

    never heard of a mullet spread but I've had smoke mullet and it's not bad. it was done with hickory iirc. You have to brine the fish good.

    fwiw: Theirs use to be a place in SE florida pompano iirc that would smoke your fishes that you bring to them.

    Rick, a guy I used to work with, brought in a container of a fish spread he made the night before...

    He played seriously in the kitchen like me so of course we always talked food and cooking...

    The spread was really good and he gave me the recipe...

    I'll copy and paste it here from MS Word...

    It's kinda vague, but it might put you on the right path, subbing a little...

    Rick’s Fish Spread

    King Mackerel or Salmon works best...

    Season fish with...
    Garlic salt
    Butter
    Lemon juice.
    (cook till done and cool)

    Add ingredients:
    Approx.10 scallions (sliced thin)
    1 1/2 tsp. old bay seasoning...
    6oz. sour cream...
    6oz. Mayo...
    garlic salt to taste...
    black pepper to taste...
    season salt to taste...
    (all ingredients approximate).

    I never tried making it...
