Skillet grease temperature?

    How do I tell if the grease is 350*.

    I'm attempting to fry some fish.

    the oil gets kind of shimmery.

    If you see a whisps of smoke you may have gone too far.

    Use a candy thermometer, they usually go up to 400 degrees. I also have a thermapen thermometer that will work, but it costs about 80 bucks. A candy thermometer is much cheeper. As far as the oil smoking, it depends on what oil you are using. Olive oil will smoke at a lower temperature than peanut or corn oil. I'm not sure that peanut or corn oil will smoke at 350.
