Does anyone have a good recipe for Sharptail Grouse?
Heat 3 tablespoons olive oil in frying pan. Brown 4 sharptail breasts with one minced onion, one minced red bell pepper. Put breasts in crock/pyrex baking dish and arrange onions and peppers around them. Smear breasts with a light coating of Dijon mustard.
Take one pint of sour cream and cut with red table wine until it becomes liquid but not runny. Pour over breasts, lightly salt and pepper, cover with lid or tinfoil, then bake for 1 hour @ 350.
Try to use a baking dish that is just big enough to hold the breasts so the sourcream/wine mixture will completely cover them.
I like this dish with wild rice and a tossed green salad. Enjoy.
I'll give that a try. Thanks a $.
