It's just a grilled cheese sandwich, using rye and swiss, with corned beef and sauerkraut in there too...

Just use good ingredients and it'll be great...

Rinsing the vinegar off of the kraut helps...
Sautéing the rinsed sauerkraut in a lil' German (kinda sweet) white wine makes for great kraut...
Sauté till wine is cooked off...

    Yum...

After its cooked, put some Thousand Island dressing on the bread, like mayo...

    GREAT combo...

Make two or you'll be sorry...

    Rueben Grills kick a-s-s!

Go for a classic with Corned beef or go new york style with Pastrami, or blow your mind and do a combo!

Yes, I agree to use quality ingredients - NO alpine lace swiss cheese.

Go creative and add some feta cheese while you're at it!

But definitely, the Thousand Island dressing is key.

    ;)

Spread two sides of pumpernickle with butter, lay on counter, butter side down. Top with warm corned beef and real swiss cheese. Rinse sauerkraut under running water and press dry. Mix saurkraut with sour cream. Spread on the corned beef. Close the sandwich and grill on a sandwich griddle, butter side down, or a saute pan until bread is crispy.
Believe me, once you use sour cream, you'll NEVER use 1000 Island again.

Kosher corned beef or pastrami. Good baby swiss.
