    stirring is the Zen part. How do you stir reflectivly in the oven?

    425 20-30 minutes of medititation or was that a nap get up stir observe color repeat 10 min later.
    Allows for less oil coonass needs to watch his weight.

    Yes, I think it can give the gravy a cleaner flavor when the roux is baked. Used to do large pans of it at one restaurant I worked in Seattle, we'd make about 20 gallons of gravy at a time.
