I have seen several 1911 9mm replacement barrels for 1911 styl3 pistols. I assume these are to replace the original 45 ACP barrels.

Will the same barrels work in the same way with the same fitting when using the 9mm barrell to replace a 38 Super barrel?

A 9mm barrel will not just replace a 45 barrel in a 1911 originally made for 45 ACP. A gun made for 45 ACP will have a breach face for 45 ACP in the slide. Thus you can not just put a 9mm barrel in a 45 ACP gun because it will not work.

But if you have a 38 Super or 9mm 1911 you can buy and have fitted another of 9mm or 38 Super, respectively.

Not just the breech face, but also the ejector on a .45 will not reliably work with a 9mm. (They wont grab/hit the 9mm rim)

So, you also can't just buy a 9mm slide & barrel to run on top of a .45 frame.

Well yes. But I was just hitting the highlights of why it is not a simple swap.

To go to a 9mm from a 45 ACP the following need replaced or worked on:

    The ejector
    the extractor needs tweaked
the feed ramp geometry on frame ( if using non-ramped barrels)
the barrel and bushing, and the slide stop.
the slide ( to a slide that has a 9mm/38 Super breachface)
    buy additional 9mm magazines

All in all don't bother trying to turn a 45 to a 9mm. Just buy another 1911 chambered in 9mm and keep or sell the 45 ACP.

    Now a 9mm to 38 Super, or vise versa, swap is much easier. To do that you need to;
    Buy barrel, bushing.
    Tweak extractor.
    Buy different mags.

What HAIL CAESAR said, plus I do know some guns that us3 38 suoer mags for both calibers, I'm not saying I recommend it, but that I have seen it work well.

Oh yes, you are very correct. A good majority of the time 9mm will feed fine out of a 38 Super mags. I do it quite frequently, whether I meant to or not.
