Red Beans and Rice - yum!

    I have had a container of dried red beans in my pantry for MONTHS now and I just decided I'd try making red beans and rice. So off I went, no recipe, just my intuition and by darnit if they aren't delicious! Woohoo!! I mixed brown and white jasmine rice and it's quite yummy.

    I figure the entire (big) pot will make about twelve meals, and I used about $1.50 worth of beans, another $1.00 worth of rice, two onions, one portabello mushroom and various spices and such to add flavor. So for twelve meals, I think it cost me about four bucks. That ain't too bad, eh?

    You're absolutely right!

    For an even more complete meal you can pull the meat off of a juicy flavorful rotisserie
    chicken and fold it in at the end, with some chopped Italian Parsley...

    Isn't Jasmine rice a beautiful thing?
    I love the smell of it when it's cooking...
    It's incredible with just some butter, salt, fresh ground black pepper, and a lil' Kraft parm...
