Potatoes Au Gratin recipes: It rocks!

    I made these tonight, and they were VERY good.

    Had them with (1) a steak cooked on cast iron and finished in the oven, with (2) a side of steamed broccoli and brussels sprouts tossed in butter and sour cream and hit with some salt and cracked black pepper.

    This makes enough for 3 or 4 people to have a generous side dish.


    Potatoes Au Gratin


    4 med. red potatoes (boil or bake)
    Skin and cube potatoes; place in baking dish

    Fold in (not smash; keep cube-shapes of taters) the following:

    Sour cream (6 oz. or so)

    Grated Parmesan cheese (enough for a layer to cover potatoes)

    Kosher salt and fresh-ground black pepper

    Top with: Layer of crumbled or grated sharp cheddar cheese (not that wuss mild; go sharp and be a man).

    Bake uncovered at 500 degrees for 10 to 15 minutes (until cheese is melted and bubbly)

    Hit the broiler for a few minutes to brown the cheese

    Remove from oven and top with sliced green onions

    Nice... Few things are better than good taters au gratin...

    After just a few more months of Atkins and exercise, I'm gonna be trying your recipe...
    ---and Entenman's---and Panera---and Eddie C's cheesecake...
