Not sure why, but I'm craving eggs benedict this morning. So here in a few, it's gonna be off to the store to buy english muffins and canadian bacon.

Wow! Did you actually bother making your own hollandaise?

I use a McCormick Hollandaise sauce kit. You just mix the powder with butter and water over heat. Turns out real nice actually.

Making Hollandaise from scratch is fun but it does take some practice. The trick is the clarified butter can't be too warm and you have to wisk it into the eggyolks slowly.

Well that's why any of us noticed this thread! We're all thinking "Damn, this guy got up, cracked some eggs, seperated out the yolks, clarified some butter and whisked himself together a ginnnnuwine Hollandaise sauce first thing in the morning!"

We were all going to be very impressed! ;)

I still think I did pretty good, even if I didn't make the sauce from scratch. I mean hell...eggs benedict is the most complicated breakfast dish I make. Gotta do the english muffins, the poached eggs, the Canadian bacon, the Hollandaise sauce...I mean...what more do you want from a guy??? ;)

Probably the second best Eggs Bennedict I have ever had a friend made with McCormick Hollandaise sauce mix.

My wife had never had Eggs Bennedict, so of course I had to make it for her from scratch. I blew the first attempt at sauce, so I started over - the second attempt came out pretty good. Breakfast in bed - my wife was pretty impressed.

The Bridgeport Inn in the Eastern Sierras has wonderful eggs benedict. My boss left for Bridgeport yesterday and eggs benedict was the first thing I thought of! lol

Not to brag, but my wife makes the best hollandaise sauce from scratch. ;f We have eggs benedict only on special occasions. ^7

Does she make Béarnaise sauce also. That is to die for on a nice delmonico steak.

I heard that a French chef came up with that to cover up the taste of rotting horse meat. Nosiree, my steaks are cooked rare with a pinch of salt & fresh ground pepper. Wouldn't want to cover the taste of great bison or elk meat. <c>b
