Use Roma tomatoes, and scallion in place of white onion.;)

I use Romas also, one of the reasons I ask is because I went to Apple-Bees and had a SWest meal and it came with their picco de gallo and its was great, different but really good.

Try to use fresh squeezed lime juice.
Easy on the garlic, but fresh makes a difference too.

One nice tip is to use Vidalia onions which are milder but tasty and sweet.

I should have mentioned earlier, if I go out to buy tomatoes, I pick up Romas. During the summer, I use whatever fresh tomatoes we have on hand. A mix of yellow, pink and red makes a beautiful salsa :)

+1 on this with ROMA tomatoes (almost always flavorful) and the addition of Tomatillos.

    white onion (chopped)
green bell pepper (not in above recipes; adds a lot for me)
    diced jalapenoes
    diced Roma tomatoes
    chopped cilantro
    fresh-squeezed lime juice
    a little salt

toss and let sit a while for flavors to blend.

Sliced green onion (scallion) may also be added. You can put them on almost anything, ice cream included, and make it better.
