Lets hear sugg. on my favorite mexican salsa.
Here is mine, and sorry, but I don't measure anything
Salt & Pepper
Use Roma tomatoes, and scallion in place of white onion.
I use Romas also, one of the reasons I ask is because I went to Apple-Bees and had a SWest meal and it came with their picco de gallo and its was great, different but really good.
Try to use fresh squeezed lime juice.
Easy on the garlic, but fresh makes a difference too.
One nice tip is to use Vidalia onions which are milder but tasty and sweet.
I should have mentioned earlier, if I go out to buy tomatoes, I pick up Romas. During the summer, I use whatever fresh tomatoes we have on hand. A mix of yellow, pink and red makes a beautiful salsa
1 minced Red Onion (Or white if you prefer)
1 minced "bunch" green onions
1-2 cloves minced garlic (I recently started substituting granulated garlic with sucess)
1-3 jalapenos minced
? (don't count them) 5? roma tomatoes diced
1 bunch ciantro minced
salt to taste
+1 on this with ROMA tomatoes (almost always flavorful) and the addition of Tomatillos.
white onion (chopped)
green bell pepper (not in above recipes; adds a lot for me)
diced Roma tomatoes
fresh-squeezed lime juice
a little salt
toss and let sit a while for flavors to blend.
Sliced green onion (scallion) may also be added. You can put them on almost anything, ice cream included, and make it better.
