OMG....REAL Bacon...seriously real bacon!!!

    I met a pig today. Several actually.
    Prior to today I didn’t know a Tamworth from a Gloucestershire Old Spot…now I do. And they both make some pretty good bacon (and chops). Especially when the Old Spot is crossed with wild boar. Now I just have to figure out how to get bacon home from Ireland, through US customs. Smuggling ten pounds of bacon in a bodily orifice just ain’t gonna happen. I guess this is one of those “first world” problems Sean Penn likes to make fun of.
    Wifey and I are now staying at an Irish B&B south of Limerick, Ireland for a few days (Rigney’s Farmhouse…www.rigneysfarm.com if you ever want to book a stay…or perhaps to plan your final resting place).
    Yes, the wifey is the same wifey featured in the ‘Falconry’ thread from yesterday. The difference is that this B&B is a working free-range farm. Cattle, pigs, chickens, turkeys and ducks. Two people…a husband and wife…running the whole farm PLUS the B&B. Did I mention they cure their own bacon? Sweet Jesus.
    Guess what’s for breakfast. Pig, ten ways. Throw in some fried duck eggs and barley bread. More bacon? Sure. Pork chops for dinner. Jews…you don’t know what you’re missing.
    If I die, just feed me to the pigs…we’ll call it a fair trade.

    That's beautiful. And I'm a bad bad Jew, bacon comes from the bacon animal, and the bacon animal Which chews its cud and has cloven hooves. Thats my story and I'm sticking to it!! :miff:

    I'm learning that small-time bacon the the porcine equivelent of the micro-brewery. Oscar Meyer is to bacon what Bedweiser is to beer. There's SO much better out there!

    What we had this morning was nearly 3" wide. On one side was cracklin; the other side was what looked like Canadian bacon (the round, tenderloin looking cut)...in between was the part that looked like traditional American bacon. Not sure if those cuts are actually connected on the pig, but that's what it looked like.

    Another pleasant surprise...pigs don't smell! Which is a good thing because they were living 100' outside our room. I'm used to being able to smell the stinch of 10,000 pigs living in an industrial facility from a mile away. But given free range, they're the cleanest critter on the farm.

    We cure, make sausage, and do custom cutting. Also do pig roasts in season---the bacon sells faster than we can make it. Currently building a smokehouse to start applewood smoked bacon, sausage, and ham. Not an easy life, farming, but there is peace of mind and food security...
