made some Brunswick Stew this weekend.

    This is a Southern thang, y'all......but mmmmmm good.


    Brunswick Stew

    1 large white onion
    1 bottle Catsup (24 oz.)
    1 bottle Worcestershire (10 oz.)
    2 cans pork barbecue
    3 cans baby lima beans
    3 cans chicken broth
    3 cans whole potatoes
    3 cans diced tomatoes
    3 cans whole kernel corn
    1 stick of butter
    3 pounds ground beef
    8-10 boneless chicken breast strips
    salt and pepper to taste
    hot sauce to taste

    Brown ground beef and drain grease. Boil chicken breasts.
    Chop up onion. Cut potatoes into bite size pieces. Add all ingredients to a large pot, except for the corn. (I also add the juices of the ingredients, right from the can.) Season to taste with salt, pepper, and tabasco. Bring to a boil, then let simmer 5-6 for hours, stirring occasionally. When it looks and tastes right, add the corn. Corn will stick to bottom unless you add it last and stir it.

    My wife and I made some a few weeks ago our recipe was diferent though. I figure Brunswick Stew is a generic term for pretty much any kind of non-beef based stew. Here's our recipe....


    2lbs. smoked chicken pulled off the bone
    3 lbs. hickory smoked pork
    1-2lb. bag frozen veggie mix
    1 can black beans
    1 can red beans
    2 med. onions
    2 cans tomato sauce
    1 can ro-tel
    2 cans chicken broth

    Put it all in a big pot, add water if necessary to cover and let simmer on low all day.

    Great with cornbread and Cholula hot sauce.
