Killer Salad For Summer

    Had our annual springtime soiree at our house last night. This time the theme was Springtime in Tuscany, so everyone brought something Italian. I made a salad called Greek-Italian Chopped Salad. YUM

    Here are the ingredients:

    Romaine lettuce
    Fresh fennel bulb
    Onion
    Red bell pepper
    Ceci beans (garbanzo / chick peas)
    Feta cheese
    Genoa salami
    Kalamata olives

    Dressing:
    Olive oil
    White wine vinegar (I used balsamic instead)
    Garlic
    Oregano

    You chop the romaine into small pieces and all the other veggies you dice or slice small. Then toss the dressing in with it. YUM O RIFIC!

    I hope you used sweet Vidalia onions.

    Trivia fact: I met the fellow on the staff of the Attorney General of Georgia whose job it is to protect the name and honor of the Vidalia onion from poor imitations claiming to be Vidalias.

    Glad you liked it! I didn't use Vidalias, just regular old white ones. I took the onion quantity down a touch because a lot of people don't like raw onion. It worked though.

    Fennel is a great sleeper ingrediant in most any salad-- yours looks great.:)

    2 cans of good tuna drained, chopped onion, 1 can of drained kidney beans(small)1 tablespoon of hot peppers( the kind in a jar chopped up and jucy like for subs)2 tablespoons of mayo,

    Sometimes I add cooked pasta sometimes just serve on lettuce,
