    Bianco named best pizzeria in the nation

    Chris Bianco's Pizzeria Bianco in Phoenix is the best pizza restaurant in America, according to the March issue of Every Day With Rachael Ray, which hits stands today.

    The magazine recruited Ed Levine and Adam Kuban from the blog Serious Eats (seriouseats.com) to crisscross the country in search of the best pizza. They created a March Madness-type bracket of 64 pizzerias, divided by regions.
    Levine's admiration for Bianco's James Beard Award-winning pizza goes back several years. He has praised it in the New York Times and in his 2005 book "Pizza: A Slice of Heaven."

    "We're very grateful" for the recognition, Bianco said Friday.

    What makes Bianco No. 1? Levine says, "Pizza is all about balance, texture, skill and taste," and Bianco's has the "perfect blend." He also notes that Bianco "isn't trying to replicate Neapolitan pizza." Instead, "he's bringing his own artistry and craftsmanship."

    Levine says "you can taste how much he cares." For Bianco, "Pizza isn't a job. . . . It's a calling," he says.

    For more than 20 years - ever since he started making pizza - Bianco, 47, has insisted on overseeing every pizza that slides in and out of his oven. But a recent flare-up of asthma has forced him out of the kitchen. It's not clear when he will be back.

    Levine and Kuban placed Pizzeria Bianco, Arizona's only entry, in their South-Southwest bracket. In the first round, it defeated Russo's NY Coal-Fired Pizza from Houston. Next, it advanced against Antico Pizza Napoletana in Atlanta and moved on to vanquish Dough Pizzeria Napoletana in San Antonio. It swept into the Final Four with a victory against another Atlanta contender, Verasano's Pizzeria.

    The semifinal pitted Pizzeria Bianco against one of the country's most acclaimed pizza parlors, Pizzeria Mozza in Los Angeles. The championship was secured by conquering New York's powerful Motorino, which had fought its way into the finals by overpowering Great Lake in Chicago.

    "We do our best not to let anyone down," Bianco said.

    Pizzeria Bianco is at 623 E. Adams St., in Phoenix's Historic Heritage Square.

    The judges may also be the types who prefer Chicago style over thin NY style.

    I still get weird looks and responses here in TX when I ask for 2 slices of pie,

    They say...."uh, we don't sell pie here", and I'm like..."pizza pie"?

    it lost something in the 70's..

    I had pizza in Queens last year in a pizzeria dirty enough to make some of the bubble boys around here blanch, and it was to die for.
