Any form of spa treatment! Massage, manicure, etc. Take her out for a really nice meal, or away to a cabin somewhere.

Not sure how close you are to the coast, but I did a cruise last year. Before you think it's too expensive, I took most of a year to pay it off and it was well under $100 a month. It was the first vacation she and I took w/o the kiddos. It was life changing! :)

sherries berries. I did it last year and am doing it again this year (by request). They are strawberries dipped in chocolate. They come chilled and are great! You can spend from $19 up to whatever. Just a thought.

It all depends on what she likes and what she will appreciate, and not to forget what you got her in the past.

I am in the same boat as you, trying to figure out what to get. I proposed last v-day in a big way, and now there is no way to top that lol.

blurb.com, you upload your own photos and they make a real book of your photos, i did one of our wedding photos, she was pregnant when she opened it, so those hormones didnt help, but she just sat staring at it, crying for like 2 hours.

How about spending no money at all? Just spend the WHOLE day with her. Inexpensive breakfast, lunch and dinner, kick it at home, cuddle and enjoy each other ALL DAY. What would happen if you had a unfortunate situation occur and you had no money for gold dipped roses, rings and things of that nature, would you still love each other? Would you really enjoy each other's company without all the benefit of material trinkets that will temporarily pacify?
Don't get caught up in all the material hype and imagery the media saturates our airwaves with. Just live, love your mate, appreciate each other and make sure you let them know how much they mean to you EVERYDAY. Pardon me if I'm taking this off-subject or making a light-hearted question a debate, but I just attended my cousin's wife' s funeral and she leaves behind a grieving husband and three beautiful children. Terrible stuff to be dealing with for him, I'm sure. Just to see her face again would be enough for him.

Does she need a new camera? Computer? Puppy? I'm probably no real help, I hate Valentine's Day and I hate typical gifts that I'm supposed to like. I would never, ever go to a spa or get a massage..I love flowers but I'd rather have the whole plant (oh there's a thought, get her a potted miniature rose)..I refuse to eat chocolate that has been ruined by fruit. I do love jewelry but the only thing I wear always is my engagement ring, but if she wears jewelry a nice set of earrings would probably work even though it's a common Vday gift.

One year I bought 10 or so fortune cookies and managed to replace the fortunes with one's I wrote myself. "good for one massage" "good for one romantic dinner" and so on. Oh, and swing by a chinese restaurant and get a takeout box to put them in.

Clean the house (or have someone do it while she's out).

    That would work for ME.

    Another option: http://www.customfortunecookies.com/dozen.html

    Other ideas:
    - schedule a private tour through a planetarium (hope for clear skies on V-Day), then spread out a picnic blanket for food and wine. Yeah, this is a bit spendy.
    - lingerie of the month club, if she's into that
    - wine of the month club
    - carriage ride and dinner, if available in your area
    - go write something in an open field, then hire a private pilot to fly you over it
    - hire a personal chef for the night for a nice dinner at home; hire someone to clean up the mess as well
    - Vermont Teddy Bear
    - Dinner out and jazz night
    - Go to a poem reading night, pay one of the readers to read something you write yourself
    - Concert, a play, or comedy club if it's not something you do regularly
