    Mmmm. I love jambalaya. We had a close second a few nights ago. Red beans and rice. My high school years were spent in New Orleans. I am quite fond of it's food.

    When I do jambalaya I do a big batch and fill and freeze many 2 cup tupperware bowls. Just pulled 1 out for dinner the other night. Yummy!

    So when can I come over to try your Mom’s recipe?

    My wife makes a *****in’ jambalaya, especially for a Yankee girl. She made some this week and used spicy Italian moose sausage in it a colleague gave me. Superb!

    I have heard that the key to good jambalaya is to slowly brown your onions until they are almost the same color as a dark roux.

    I’ve just don’t know what the rest of the process is

    Zatarain's for a base. Add andouille sausage, chicken, shrimp and anything else you like.
    The wife makes 3 boxes worth in the 14qt IP in 35 minutes. She uses pre-cooked shrimp and doesn't add them to the pot until everything else is done. Stir them in, let sit 5 minutes to heat through, then plate it up. Not a made-from-scratch recipe but fast, tasty and, honestly, not bad at all.

    It's pretty simple. There are plenty of recipes on line, all are very similar. I use spicy Italian sausage instead of the andouille and imported Italian crushed tomatoes with basil. I also use both shrimp and chicken, but you can use all chicken if you don't have shrimp. The important thing is to keep stirring it while its cooking.
