Here's what I fixed tonight.

Five Italian sausages sliced into one inch pieces. Fry in a skillet until done. Remove the sausage and drain off the fat. Toss in sliced peppers (red, green and yellow). Stir fry but not too long-you want to keep them crisp. Put the sausage back into the skillet for about a minute and toss altogether. Good eating and only one pan to clean up.

if you don't finish then in tomato sauce.

Then sliced and browned.

Then added olive oil and onions to the peppers and maybe some hot pepper flakes.
