    I need a good recipe for home fries that doesn't use much oil. Is that possible?

    oven bake them with just a little oil?

    And for easier browning, try sprinkling a little bit of sugar on top.

    I like them two ways:

    1 Bake a few potatoes until tender...put them in the fridge overnight.
    Next day, slice or chop them up (skins on) and brown with diced onions. I use crisco shortening and just a little butter. Can also used bacon grease.

    2 Buy the frozen shredded potatoes, and do the same thing as above, but on these I use canola oil.

    try using a griddle to cook your potatoes. Also add onion, a little salt and fresh ground pepper. Towards the end or so add a little bit of either butter or oil and you should be good to go.^7

    Partially cook them by any means (bake, parboil, microwave, etc.), then chill them. Makes them much crisper at the final cooking.
