    It's been in the 80's here for some time now so I thought I'd smoke some spareribs I picked up a few weeks ago for $1.29 a pound.

    I decided to trim off the skirt after smoking instead of before. Great quarantine food.

    Last trip to the store a couple weeks back, I bought some hamburger, hot dogs, brats and ground chuck. Now I just need to buy a grill!

    225 for about 6.5 hours. Wrapped them in foil about 3.5 hours in.

    tried to yesterday, but it kept tripping the breaker.

    for all you "purists" who look down on electric smokers...bite me!

    (It's probably a home circuit issue)

    You did a great job with those ribs OP. Nice looking smoked meat.

    I use my WSM year round, except for the coldest and windiest days.

    Nope, not gonna beat a man because of what he uses,
    he deserves to be beat if he dont smoke some meats.

    We smoked some St. Louis style ribs for my daughter's birthday a few weeks ago. I also did some baked beans with lots of bacon and maple sugar. Topped it all off with early corn on the cob. It saddened me that there weren't any leftovers, but it also made me very happy. Doing salmon fillets next. I coat them in a lemon butter with rosemary and sliced fresh lemons. I prefer alder wood but it is hard to find in big chunks here so I am going with hickory. Mesquite just doesn't fit with my taste buds.
    The key is low heat and keeping the moisture in and finishing off with a good sauce.

    I sold my Rectec last year, no more low and slow for me, now i just go to Hickory River whenever the urge strikes.
