I am heading to Denver CO in a few weeks (Hopefully) for a mini vacation.

Can I buy a pistol from a LEO gunshop like nevesuniforms while I am there if I am out of state?

Yes, you can buy a pistol from Neve's and have it shipped to a FFL in your home state.
When you figure the cost of shipping and the cost of the transfer at home, you should still do very well price-wise with Neve's. I've purchased dozens of trades from them over the years.

That's one of the worst parts about working out of town for me..I get to go to so many gunshows but I can only buy long guns.

And you can't necessarily buy long guns in everystate, some states only allow you to buy a long gun if you are from certain states.

You can buy out of state with a letter from your department. I can't recall what the letter has to say aside from the fact that it is for duty purposes.
