    I'm beginning to dabble in some various sauces and marinades. But I'm looking for some recipes...got any?

    I've got one at home I'll post tomorrow that's awesome on "smoked meat". I've used it on smoked turkey and smoked deer roast.

    Uuuuuhhhh ...can you bit a bit more specific? I searched my recipes for 'sauce' and got 359 hits. I searched for 'marinade' and got 30 hits. The sauces run from béarnaise to bordelaise to alfredo to mousseline to pesto to peanut to salsa verde to pico de gallo to piquant to étouffe to remoulade to coulis to BBQ to catsup. The marinades are for wild game, seafood and various meats.

    Smoked Meat Basting Sauce:

    1 cup margarine
    1/3 cup worchestershire sauce
    Juice of 2 lemons
    1 tablespoon celery salt
    1 tablespoon pepper
    1 tablespoon basil

    Simmer 5 minutes before using as baste.

    I've used this one on both smoked turkey and smoked deer roast. While it sounds kinda gross with the weird ingredients, it actually ends up being quite tasty.

    Mojo marinade for fish & pork

    4 large sour oranges
    2 lemons
    1 sml lime
    2 garlic cloves peeled and squeeze
    1 tea spoon of cumin
    1 table spoon of salt
    2 table spoon of black pepper

    Cut and squeeze all citrius fruits into a medium size bowl, add spices and seasonings and stir to fully mix items. Adjust garlic & cumin & salt to your likeness.

    Great for a simple fish marinade or good on pork and chicken.
