Tried this today it was pretty good. 1 pound of peeled deveined shrimp 21-25 count. Drain on paper towels but do not rinse. I bought easy peel. Put the shrimp in a bowl and salt, pepper and sprinkle with 1 teaspoon of sugar, stir to mix. Make sauce now in a bowl 2-3 Tablespoons of softened butter 1-2 Tablespoons of fresh chopped parsley, 1 minced clove of garlic and salt,juice of 1 lime (I messed up and used lemon it was still good) Stir to mix set aside. One large heavy hot frying pan. 1-2 Tablespoons of oil heat until it starts to smoke. Put half of the shrimp in the pan (you want all shrimp to be flat on the bottom of the pan) Cook ONLY ONE MINUTE Remove the pan from the heat and turn the shrimp over cook off the heat in the hot pan FOR 30 SECONDS, remove to a plate, reoil and re- heat to just smoking ( if you fill the room with smoke you went too far)cook the rest the same way,one minute and 30 seconds. Put all the shrimp and the sauce into the pan (still hot but off the heat) cover and let heat for one minute. Serve now.
