Went by the Piggly-Wiggly this afternoon, picked up some chicken livers, and headed to my favorite fishin' hole. Wound up with six Channel Cats and one Bass, all between 18 and 24".
No big deal, just wanted to share it with y'all. I'm looking foreword to the fish fry later this week, with potatoes, fried biscuits, slaw, and Baked Beans.
I have half of them soaking in salt water, the other in Buttermilk, so I'll let you know which one works best for me for getting rid of the fishy taste.

Here's how I do up my cats.
You'll need one 3.5 oz. package of Panko breading 3 teaspoons cayanne pepper 1 teaspoon salt 1 teaspoon fresh ground pepper. Mix well set aside.
Fillet and place in Tabasco water for a couple of hours. (1 table spoon Tabasco sauce to 1 cup water.) You want to cover all the fillets.
Remove from Tabasco water pat dry and dredge in flower.
    Dip in plain tap water.
place in breading mix pat into mix turn over and repete.
    Fry as normal.
This does up about 8 fillets and is best when served with coleslaw cornbread and beer. ST
