I have a Glock 23 which has the ability to convert to different calibers, obviously. What are the potential caliber conversions for a Glock 21? What are the necessary parts that I must get? Barrel and magazine only?

The G21 conversions that work are all in 45 ACP. (joke)

LWD currently offers 400 Corbon and 40 Super. These 40 cal wildcats are known to work in most guns. Use the standard G21 45 ACP mag. "If" you have a feed issue, swapping your mag out to a single stack 10 rounder will fix the issue 99% of the time.

LWD used to offer a 10mm conversion barrel HOWEVER it was proven to be about 90% reliable. This 10% failure to eject rate is far to high to make the conversion interesting. We discontinued this offering several years ago. If you want to fool around with one I think KKM still offers it?
