Fresh 'maters..

    The fresh tomatoes are popping up everywhere here in Mo.

    I had one goal for the week, it wasn't an ambitious goal, but it was mine.

    Bacon and tomato sandwiches.

    I hit a roadside stand and got some vine ripened goodness.

    Picked up a pack of Burgers Steak Cut bacon.

    For those unfamiliar with steak cut bacon, one pound consisted of 6 VERY thick slices.

    White bread toasted, hellmans mayo lightly on both pieces of toast.


    1.5 slices per sandwich.


    Perfection.


    And no, I have no pictures.


    And, yes, I am far to happily sated to worry about completing my sentences.....fragments it is.

    I did the same thing when my big beefsteak tomatoes ripened up in the garden this year. Picked a nice big juicy one and then went in and made a nice big BLT with homemade bacon fat mayo. :eat:

    We've been getting a ton of them. Stick 'em in the fridge for an hour, cube 'em, and sprinkle with salt. Mmmmmm!

    We've been eating them for a couple of months now. I've got 30 pints in the cupboard ready for my soups and stews. I've got a couple of salsas and a few of just puree.

    Sometimes, we cook a whole pack of bacon on the grill on Friday night just to have it available for sammiches during the weekend. (we grill every Friday - rain or shine)

    The garden really did produce this year. We did better with less water and less attention than when we tended it leaf and root....I have no idea why.

    She's already planning the next planting...I'm buying more jars....

    Simple tomato salad: Ripe tomatoes cut in bite size pieces, olive oil, coarsely chopped _fresh_ basil leaves, crumbled aged asiago cheese. Let flavors meld for 15 minutes or so and chow down.

    Wife makes a good dish of stewed Tomatoes in glass baking dish, layer with cheese and soda crackers and bake in oven. Pretty tasty.

    Salad;

    Tomato, cucumber, onion, bell pepper or banana pepper. Salt, pepper, olive oil, and vinegar to taste.

    Love it.

    Today's snack..


    Sourdough mini loaf...cut four slices, brushed a little Olive Oil on em, little garlic sea salt, and pepper and popped under the broiler for a few minutes.


    Topped them with prosciutto, fresh mozzarella, fresh basil, and a nice 'mater slice.

    After that a light drizzle of olive oil, touch of salt and pepper, and a very light drizzle of good balsamic just to piss the Italian purists off.

    Kinda a caprese sammich on steroids.

    I love fresh matters but they have been pretty poor around here this year. The good ones are just too expensive for my cheapness this year.

    I did get a couple dozen good ones when my mom came up to visit from Kentucky. Ate them up (and some fried green matters) in about a week.

    I planted early, my "maters" have come and pretty much gone...:crying:
    The three weeks of 100 degree + no rain, pretty much doomed them..

    We had to rig a sun screen "tent" over ours and water them every day, no other way to do it out here.
