Father's Day BBQ ?'s

    For Father's Day I'm going to smoke a 11 lb brisket & a 8 lb pork shoulder. If I want them done by say no later than 09:30 am Sunday morning what time should I start them Saturday? Also I picked up the meat at WalMart. I'm not to worried about the beef but the pork says it's been soaking on "10% solution." I'm assuming to tenderize it. Has anyone had any experience w/ Wally Worlds meats? Any problems I should know about? I plan on washing the pork well before I season it & put it on the smoker.

    We haven't had much luck with Walmart meat and try to avoid buying any from our local supercenter.

    But that may just be a local problem that we have to deal with. It may not hold true in every locale.
