Not sure where my original post went but least this way I don't have to correct it...

    Anyway, which to use when...?

I use EVOO for everything except baking and making popcorn...
It's considered a flavorful oil and sometimes you just don't want that...

Because other oils have higher smoking points, supposedly you shouldn't deep-fry with EVOO,
but I've seen chefs on TV that do...

It's fine to cook in and I'll top off many dishes with a drizzle right before serving...

Pasta, beans, salads, lentils, risotto, stews...
A lil' raw oil on top right before serving is referred to as
'blessing' the dish by the Italians,
and adds a great flavor and texture...

FOR THE LOVE OF GOD IT'S EXTRA VIRGIN OLIVE OIL, NOT "EVOO"!!!!!!!!!!!

Why not just call it "Tactical" or "Extreme" while your at it?!
Rachael Ray needs to be smacked.:soap: :soap: :soap: :soap:

Anyway, I prefer the olive oil.

As a side note, don't use EVOO in salad dressings by itself. It tends to harden when it gets cold. I mix 1/2 and 1/2 with canola.

Or, if you do, remember to set your leftover dressing out a few minutes ahead to allow it to "warm" or nuke it for like 5 seconds depending on the dressing.

I make a tasty "honey" mustard dressing that I use EVOO in.

Because oil of any kind will go rancid, I keep all my oils on a turntable in the refrigerator, as well as my peanut butter.
