Empanadas with fried yuca

    Here's a good simple meal that's easy and quick to make.

    1-2lb of fresh yuca ( aka cassava )

    1lb of plate/skirt steak
    1 medium onion
    1 garlic clove , peel and crush
    2 cup of your fravorite cheese
    1/4 cup of dry white wine
    1 Empanada pie dough

    > Take yuca and cut ends and peel, slice the yuca after peeling into 1/2" slices, heat canola oil to high and drop yuca in and fried to a rich brown color and the yuca is tender. Make sure oil is hot.

    > remove and pat dry & sprinkle with salt/pepper and serve.


    > Chop steak up into small bit and brown in a skillet, while adding fine chopped onions and garlic and cilantro , followed by a splash of dry white wine. Season with salt and blk pepper if you like.

    > take one dough patty and filling the dead center with the browned ingredients and a few sprinkles of cheese.

    > fold the dough over and pinch the edges together with a fork end.

    > drop folded dough into hot canola and fry for about 2-3mins, turning over once.

    > remove and drain oil and server after letting it cool.

    hmm hmmm good. You can add anything you like as a filling (pork,chicken,goat and even fish )

    This meal is a good super bowl or big game meal....;f
