Eggplant & Pesto

    I thawed out some of my pesto tonight and spread it halved, salt-water soaked eggplant then baked it. Really, really good!

    I make my own pesto with basil, garlic, olive oil, salt and pepper. This fall I will freeze all I can to eat until next spring. It isn't as good as fresh but beats all alternatives in December ;)
