Does Blue Cheese, Gorgonzola, & Stilton go bad?

    Really!
    I have a chunk of Stilton in my fridge and my wife unwrapped it tonight and freaked,
    like she found a rat head...

    She thought it was some Asiago or something that went bad...

    I cracked up and assured her that it was Stilton and it was supposed to look like that...

    But--- I did buy it about 3 weeks ago... The other night I tasted some and it tasted the same as new...
    Funky, no doubt--- but good...
    It's heavy duty stuff...

    So I wonder what's the dealio...

    Just eat it the first week ya get it I guess...

    How do you know when sour cream goes bad? The *****'s already sour!


    Honestly, I'm not sure. I do like Stilton though! Let it come to room temperature before putting on a cracker or serving to get the best flavor. When cold out of the fridge, the Stilton's flavors are not released to best extent.
