I have a craving for some good dirty rice.
Help me with your recipes please.
buy Zatarains brand and use sausage instead of ground beef.
You will find it in the rice section of the grocery store.
I know the real stuff uses chicken livers....
But this is good an easy.

What kind of sausage do you use?
I use Chorizo or Cajun Andouille but you can get away with Hot Italian. I take it out of the casing before frying and drain it well.

I have used all of the above.
I also have used a local "breakfast" sausage that I like.
You can use any kind that you like. lethal
always good to have my culinary skills recognized and this whole thread is making me wish it was 11/26/05 because I head to New Orleans on the 27th for a week of food and music and to see Halloween there.
I do the same as lethal tupperware Zatarains with andouile or a boudin sausages & a scoop of red beans is hard to beat.
On a few ocassion I add crawfish if I can get them fresh.

By adding sausage to the dirty rice, wouldn't you be making jumbalaya[sic?] instead?
no jambalaya (for this I add sausage, diced chiken and shrimp)is different and yes chicken liver diced up. One thing I do add to the Zatarain's in for Dirty Rice, Gumbo and Jambalya (ok for all the stuff they make) is diced canned tomatoes with jalapenos
Zatarains made with a package of any of the Jack links packaged precooked ground beef is excellent.
