Copper river salmon

    Alrighty then,

    I just got back from the store with a chunk of the mighty copper river salmon. Going to cook it up for dinner. I realize the barbeque is probably the best method, but mine is on the fritz.

    So, the cooking method will have to be baked in the oven, or broiled in the oven. This is a half a whole salmon, not a fillet or steaks. How should I prepare this thing and how should I cook it?

    Do you have charcoal? Then your grill isn't on the fritz.

    Gas grilling is sacrilege.

    You might try it en papillote (in parchment) in the oven with butter, wine, garlic and herbs (dill, parsley, etc.) + vegetables of choice (spinach, onion, garlic and olive oil work well). You end up with steamed salmon infused with the various flavors.
