I know this is not an exact science but is there a matrix that compares calibers in various loads with intended game/weight? If so, can someone recommend a website or publication?

Chuck Hawks has a pretty in depth look at this subject on his site. Click link More general info is the CXP scale Winchester and Federal use. The Lyman 47th reloading manual also has an Optimum Game Weight table with a slew of data.

Take all of this "scientific" data with a spoonful of salt however. All of it will err on the heavy side of things.

This a link to Federal's interactive ammunition and bullets catalog. You can use the ammo expert part of the program and it will suggest bullet weights for the type of game you want to hunt. The program will also display ballistics for their ammo.
