I went to a sports bar in State College, PA years ago and had a "Black and Blue" burger.

It was a blackened hamburger (about 1/2 pound) with a generous ammount of blue cheese on it, served on a bun. Nothing else; it was fantastic!

I really like Maytag blue cheese and Marie's used to make a great Roquefort dressing that I have not seen for awhile.

I also like those Brie/Blue combos like the Germans put out. Yum.

Try mixing 2 parts Maytag blue cheese with one part butter, put it on a nice filet or ribeye..Then tears of joy will come!!
