Bbq Ribs

    I love BBQ RIBS. Does anyone have any good cooking secrets to share ? I like to slow cook mine, on a grill. I light the grill and turn on only one side of the double burner. I put the ribs on the cold side and close the lid. I put the burner on low heat and let the ribs cook for hours, turning every now and then. I don't use bbq sauce. I use a rub. They turn out great !

    spritz them every-now-and-then with a 50/50 spray of vinager and water.

    I've got a wicked good beef rib recipe from Cooks Illustrated (great magazine btw). If anybody's interested I can probably scan and attach it here.

    If you don't do this, you might try. Put a metal container over the hot part of the grill and add some soaked in water wood chips, be careful you don't smoke them too much.

    I have a Weber smoker I used for barbecue, usually takes about 8 hours to do 3 racks of babybacks and a chicken or two (throw the chicken on the last 3 hours). I use a dry rub as well, and make my own bbq sauce on the stove. Yummmmmmm

    You can wrap the wood chips with foil leave a small hole for the smoke to get out.

    Put the package on the fire . With only a small hole it will not burn right up but will smoke for a while.

    I've been reluctant to post this as it's not exactly for the purist but it really does makes for some excellant ribs. I got it off of the radio from a chef out of Chicago.

    Works well and takes less time if you're in a hurry and not boiling them.

    Once you prepare your ribs ie, remove the membrane and put your favorite rub on them. Place them in a cooking bag with 1/4 + cup of water. Place in a 200/225 degree preheated oven. About 2 1/2+ hours or until the meat shrinks from the bone about 1/2 inch. Once this happens remove and let cool to room temperture. Prepare your fire as you would. Place ribs on the grill once ready and smoke away... Do your sauce as usual.

    Simple and good...

    Falling off the bone, bone sucking good...:cool:

    Here's the Rib Recipe. The scans are right at the attachment limit. Hope they're ligible enough.


    I generally just do the rub and cook the meat parts of the recipe. The sauce they talk about is good but I dont really feel it adds much to the overall flavor so its not worth the bother. YMMV.
