Batter recipe for crunchy sweet & sour chicken?

    I need a good batter recipe for deep fried chicken chunks. I have a killer sweet & sour chicken recipe, but the chicken pieces need a little work. The current method I'm using is egg yolks mixed with corn starch and some soy sauce, but it's too thin. A lot of the batter disolves in the oil before it starts to brown. Any suggestions?

    dust the chunks with either cornstarch or flour.

    Make a batter with self rising flour egg and beer,salt and pepper or your favorite Chinese spice blend. not too thin.( if it is watery add more flour.--put the soy sauce on after cooking.)

    I find that using Garlic Powder, Ginger Powder and Ground Cinnamon
    ( you have got mix it so that no one flavor is stronger than the others cinnamon is the strongest so uses the least)is a real athentic
    taste.

    The dusting should help hold the batter on.
