    These turned out great!

They totally tasted like smoked salmon...
    Super juicy too...

The one piece that was left over I ate cold and it was fantastic...

2" strips (back to belly), seasoned generously with Old Bay, rolled in a single slice of bacon,
toothpicked, sauteed on each side for 5 minutes for color and crispy bacon,
then tossed into a 450F oven for 5 minutes...

It was the first time I tried doing it...

    Here's a pic...

Do you take the skin off when you do this?

Dang I'm glad you said you were kidding because I can't think of anything grosser... Salmon skin is nasty, should make good thin skinned leather...

While a freshman in college I discovered that bacon could be included in EVERY meal. I refer to it as, "The Universal Meat".

For accuracy's sake....You were not sauting the salmon
for five minutes on each side; you were searing it.

Incidently, unless you like your salmon well done, five
minutes on each side should cook it to medium with no
    further cooking requires.
