Mmm - HAM: Picked up a spiral cut ham from Costo. Before cooking, I pulled back each slice and poured honey into the cracks. I put about 1+ cups on the ham. Then covered the ham with bacon. Baked according to the directions. The ham came with a dry glaze mix which one is supposed to mix with water and pour over the ham during the last half hour. I mixed the glaze mix with APPLE JUICE and poured it over the ham. THE HAM WAS WONDERFUL! You could really taste the apple juice. It might have been the best ham I have ever done. TURKEYS: BBQed two turkeys in my side box smoker/bbq. First I pulled up the skin on the turkeys and put slices of bacon against the turkey, under the skin. - I also dusted the turkey with garlic salt pepper and my own del fuego seasoning and stuffed a few oregano leaves under the skin as well. I stuffed the turkeys with slices of apple and orange. Oiled up the turkeys and put them in aluminum pans and placed in the bbq/smoker. I filled the bottom of the pans with a mixture of chicken broth, apple juice, the gibletts and necks, and the rest of my cut up oranges, and apples. Several hours later we pulled the turkeys out. WONDERFUL! I made a roux to which I added the liquids left at the bottom of the aluminium pans to make gravy. I did not need to add ANYTHING else to the gravy - it was to die for! My wife and in-laws made a TON of side dishes and deserts which to me is what the Thanksgiving meal is really all about. I could care less about the meat!
